How it works in vanilla
In vanilla skyrim you can harvest any crops from farms for free. After that you can do what you want with them, including selling them to some merchant. And you can sell them to any farmer via a dialogue for their full price.
So what are the problems?
You can collect any crops that are not your own for free.
Instead of working for a farmer, you actually just sell them his own crops, or not his own. They must be blind because they can't tell their own from someone else's or from just a rotten cabbage from a barrel.
You do it for the full price. While even in vanilla Skyrim you sell all items 3.3 times cheaper than their full price without the Speechcraft skill, you can sell crops to farmers for their full price. If workers were paid so much, farmers would be left at a loss.
Skyrim Landscape and Water Fixes makes all the crops actually owned by farmers, and you need to ask permission to harvest the crops, but this is the only difference. Gather Wheat Overhaul requires SLaWF and uses its changes as a basement.
How it works with this mod
With this you actually work for farmers instead of just selling them their own crops. What does it mean?
With SLaWF you can't just harvest crops for free. First of all, ask a farmer to harvest his crops for him. After this, the things that happen when you activate crops change. When you're sneaking, you will do the default action. When you aren't sneaking, you can harvest only crops owned by your quest giver. All crops harvested in this way won't be added to your inventory, but will be counted under the hood. When you finish harvesting the crops, return to the farmer to get a reward. The reward is lesser than in vanilla and affected by your speech skill. By default, the farmer also won't become your friend after that (unlike vanilla), so you won't get the ability to harvest the crops for free.
After you complete the quest, you can repeat it again and again with any farmer. You should to ask the farmer again each time. You can do only one quest at any time, you can't get the reward from the farmer if you started harvesting for another farmer without completing the first quest.

Mods that add more crops to vanilla farms or move the vanilla ones need to be patched not for this mod, but for SLaWF, by adding ownership to all the crops because GWO works only with owned crops. I will not make any such patches.
Even after you add ownership, it won't work with mods that add new farms. Patches can be made by changing formlists OwnerFactions and QuestGivers.
Place GWO after any mods that touch this quest and its dialogues, and make sure GWO overwrites any conflicting scripts. Some mods that change alchemy or economy, including CACO, change this quest. A native compatibility script for CACO is included due to some changes CACO makes to crops, but this script will only work on a new game.
The Gather Wheat quest and this dialogues are the only vanilla records touched by this mod, so it doesn't conflict with mods that change appearance of farmers, etc.
Mods that add activation options for crops may conflict when the quest is active
Mods that add activation animations - not tested. Some of them may be in the previous group.
BlockSteal (SKSE version) is compatible and recommended.
Place this mod after Relationship Dialogue Overhaul
Gather Wheat Overhaul contains some global variables that can be customized.
Set GatherWheatMakePlayerFriend to 1 to make the famer your friend after you worked for him once, as it is in vanilla (after this you will be able to harvest all his crops for free, as well as other cheap items).
Reward is calculated as
Crops Harvested*(1 + (Speechcraft - CropsRewardSpeechLevelFor1X)/(100 - CropsRewardSpeechLevelFor1X)*CropsRewardSpeechBonusMult)*CropsRewardTotalMult
So, by default, when your level is CropsRewardSpeechLevelFor1X, you get reward equal to the number of crops you harvested. When your speech is 100 you get 2x reward.
CropsRewardSpeechBonusMult defines how much speech affect the reward. CropsRewardTotalMult is a total multiplier.
Your suggestions how to improve the formula are welcome.
