I had a problem where male NPC's were wearing DX armor parts and therefore missing body parts. Vorstag in Markarth was just a floating head at the bar so i decided to remove all DX armor parts from the leveled lists to make sure it can't happen to any NPC, Erik the Slayer in Rorikstead had this problem on my last playthrough. You won't encounter any DX armors on your travels, you will need the books to craft them.
